The clay is worked with the addition of water to obtain a "soft
paste" with a consistency similar to a toothpaste

PROCESSING
:
the dough is placed in wooden frames and passed over the top
with a wooden ruler to level the surface.
The newly formed tiles are placed side by side on a concrete
floor until dry.
COOKING
:
Once dry, the terracotta tiles are stacked for baking.
For less valuable products, cooking takes place at 600 °/800
°

CLAY:
Cotto Zero is obtained from clays from various quarries located at the foot of Monte Rosa.
The clays used are subjected to the atomization process which transforms them into a very
fine talc
.
The different clays are dry mixed, based on their technical characteristics and on the basi

of precise recipes, to obtain a performing mixture, and the different colors in the range
.
Very little water is added to the mixture, until a compound is obtained a compact and
consistent dough. ("Hard pasta"

PROCESSING:
the dough is worked by hand according to two different techniques, in "pani" or "panini"
,
where the dough is picked up and beaten several times on a surface to compact it
.
The mold is dusted with sand, the bread is laid down and the piece is pressed
.
This process further compacts the clay.
The piece is leveled by cutting with the use of a wire to remove excess
.
The mold is then overturned and the piece obtained is placed on metal grids. The piece
s
are placed in a dryer with controlled humidity and temperature. The compactness of the
clay requires long drying times.
COOKING

Special cooking curves are used in the oven at a temperature that well exceeds 1000
